Agave shrevei is used to make Rancho Tepua Lechuguilla in Sonora, Mexico. Roberto Contreras, a master vinatero, harvests the agaves by hand with an ax. He then roasts the agaves in an underground pit oven for 48 hours, ferments them for 8-12 days with spring water, and distills them in copper and stainless steel.
